Ayam Goreng Mamak

Ayam Goreng Mamak
Recipe source - Facebook.

Assalamualaikum guys,

Let me share my first successful recipe, by successful I mean the recipe was good.

I saw this post, if I'm not mistaken either on Tuesday or Wednesday. So I bought the chicken on Thursday because I'm planning to have it for iftar on Friday.

Well, I was planning when to buy it and all because this recipe need at least one night to marinate the chicken. (what I did).

So let me start with the ingredient as mention in the post:
  1. 1 whole chicken ( I used 7 chichen legs - thigh and drumstick)
  2. 6 table spoon of corn flour
  3. 6 table spoon of  rice flour
  4. 3 stalk of curry leaves
  5. 5 stalk of dried chili ( I did not use this)
  6. 2 table spoon of curry powder
  7. 1 table spoon of chili powder
  8. 1 tea spoon of turmeric powder ( I added myself)
  9. salt
  10. 1 egg
    Ingredients to blend it with:
    1. 6 cloves of garlic
    2. 1 inch of ginger
    How I did it:
I first cut away all the access fats, the skin is on and I cut the chicken leg into three parts for easy frying and clean all the chicken with water and some lime.

I then strained the chicken and put is to aside.

I then blend the 'blend ingredient' and put it into a container with a cover.
I added curry, chili and turmeric powder, curry leaves and salt in the same container.
I mixed it well and add on all the chicken.
I first stir it well with a spoon then I put the lid on and just give it a little shake just to make sure all the chicken are marinated well and all the chicken are all covered.
I put it in the fridge and leave it over night.
Note that I did this after Terawih on Thursday.

The next day, Friday around 6.00pm, I started prepping all the dry ingredients.

I add on both of the corn and rice flour into a big bowl and added the egg.
I then I mixed well the dry ingredient with the marinated chicken until all the chicken are all covered nicely.
Note that, if the chicken is not fully covered by the flour add both flour in a same portion into the mix.
Add a little more or a little less salt depends on how much chicken you are using.

I put a side for awhile, then around 6.30pm I started frying them.

Fried them as usual like how you would fried a normal fried chicken.

When it's done, drained the access oil and serve it with love.

Mine was kindda dark but not so when you are not that particular since I am I think it is.
At first I was using a big flame and I forgot to turn the flame down.
But all good, it taste delicious, my family enjoyed it, my husband loves it ( I think) didn't had a chance to ask him how it really was because I only packed for him did not even see his reaction. He only reply me on whatsapp saying the chicken was good.

ps: make sure you see your husband's reaction every time you cook for him. Best feeling ever just to see him eating what I cooked for him.

Try it at home, it is so simple and I promise you, it is almost the same like the chicken at mamak.
By almost I mean like 95% close to mamak chicken.

Good luck and do share it with me if you try it.
